Description

 

Terroir
Acidic soils, poor and fine textured. Mediterranean climate with influence from the São Mamede mountain range originating great temperature variations, which potentiates acidity concentration and long maturations. Most of the vines benefit from southern exposure, and growing on granitic slopes the plants are forced to compete with each other, creating a unique balance. The grapes are delicate with great complexity and good minerality. Productions are small, varying between three and four tons per hectare.

Floral, fresh red fruits and black pepper

Intense, concentrated and fresh

Gastronomy
Alentejo sauteed pork with clam velouté and cauliflower pickled foam
Fried carp in smoked bacon oil with lemon pennyroyal sauce

Vinification
Grapes are cooled to a low temperature, pre-maceration and fermentation for eight days at 26º C.
